I get asked all the time? 'What's your favourite carbon frying pan steel brand?'. You'd think I'd have this sorted after 30 years of selling cookware however I hadn't yet the compared leading French carbon steel cookware brands head to head. So here it is. De Buyer Mineral B vs Matfer Carbon vs Mauviel M'Steel. I take them all down to be ready for seasoning, season them in the oven, do some cooking, and then see how well they clean up. In them, we prepared risotto, gravy, and pastry cream, noting their cooking performance as well as how comfortably they handled and how easy they were to clean by hand. Products were purchased online. PERFORMANCE We stirred Parmesan risotto, sautéed aromatic vegetables and reduced broth to make gravy, and whisked pastry cream. To test reduction speed, we filled each model with 1,840 grams (about 8 cups) of 75-degree water, timed how long each took to boil over high heat on the same burner, boiled the water for 10 minutes, weighed the results, and repeated the weighing again after 10 more minutes of boiling. Sauciers received high marks if they produced good-quality results in the three recipe tests and offered a relatively broad cooking surface and a rounded shape that made it easy to stir and whisk. As long as I've been cooking I've used heavy-weight copper cookware. I love it but I definitely do not recommend it to everyone. Watch and find out why.
Carbon steel pans are amazing. Seasoning them properly creates a durable non-stick coating that. Popular carbon steel pan brands are Mauviel, de Buyer and Matfer Bourgeat. Seasoning the pan on the stove top generates a lot of smoke and does not necessarily give you the most resistant non-stick coating. I'm using the oven technique. Here's how I do it. 1) Get rid of the protective wax layer, using boiling water and soap 2) Cover the pan in a very thin layer of oil. Make it as thin as possible: try to wipe it dry with a paper towel. Using too much oil will create a very sticky surface! Use an oil with a very high smoking point (canola, flax seed, rapeseed). 3) Put the pan face down on a baking sheet. You can use aluminium foil to catch dripping oil. Put it in a 250°C oven for one hour. After 60 minutes, turn off the oven and leave the pan inside to cool down. This can take several hours, but is crucial for the oil polymeres to stick to the pan.
